Meet the people behind Bosquejos!

Roastmaster Juan Mercado, Carol Mercado and Michelle Barrera


While only in the Bosque Farms community since May of 2018, Bosquejos Cafe has been a lifetime in the
 making, and holds the dreams, future and livelihood of those vested in it’s fledgling hands, as well as an
 added income outlet for local Crafts Makers  and Artisans. 
Juan Mercado started in the coffee business as a young teen working for one of the largest coffee traders
 in the world.  Working his way through the ranks before becoming the chief technology officer, moving
 to and learning each department in order to adapt all areas of the company to new technology, including 
quality control buyer, and coffee futures trader.  While here in ABQ visiting family he fell in love with the
 area, so when asked by the owner of Satellite/Flying Star Cafe to become their roastmaster, he didn’t say no.
 For the next 13 yrs he roasted outstanding coffee helping this small chain grow to one of ABQs largest, 
winning many Best of the City awards for their coffee along the way.  
In 2012, by training his new wife Carol the coffee roasting skill, they started their own small coffee roastery 
with a small 5 lb roaster, it’s name: Odacrem Coffee (with the family name Mercado spelled backwards).
 mercado/odacrem.  Over the next few years with its client base growing, Odacrem Coffee, through the 
amazing startup cafe Zendo,  has helped another cafe win Best of the City.  
In 2015 Juan left his Employer to focus full time on Odacrem and its steady growth has finally brought us 
to the point where we could fulfill a second stage of coffee growth-our own cafe.  We had our eye on the 
beautiful Bosque Farms for years with its small hometown look and feel, and were blessed enough to locate
 here in May 2018. We cashed in the retirement and savings account and gambled it all, hoping for a the dream
 of all dreams to be fulfilled.  
With our main focus on serving great coffee drinks, our breakfast and lunch menu fills a need here in Bosque
 that people seem to love.  We also display arts and crafts for local craftsman giving them an affordable outlet 
to market their hand crafted goods. Our success has been in large part to the dedication and support of the 
people of Bosque, Peralta, Los Lunas and locals nearby, supporting their small local businesses.  We hope to 
continue and build on this success, growing to become a viable and vibrant local hangout for all to enjoy.
Michelle, a local from Los Lunas has  joined the team and bring her passion, skills and talent to the barista side 
of the business.  Combining that with previous restaurant experience, Michelle has become a valued and very 
integral part of the Bosquejos team. A CNM Student and Artist herself she fits in perfectly with the theme of 
our cafe.
There are many things in the works for the future of Bosquejos including evening hours, a real and faster 
drive thru, Band and open mic nights….
